Flapjack Friday: On Waffles
Although, generally, I eat to live, I do love breakfast for dinner, especially when it includes steaming hot waffles paired with crispy bacon.
I have fond childhood memories of eating waffles at Grampy’s Pancake House with my Grandma Kelly and later learning to make Marian’s waffles from scratch. Her vanilla-rich recipe is simple and delicious. While traveling, I discovered some of the best, light and fluffy pumpkin waffles I have ever tasted at the Snooze Eatery in Fort Collins, CO.
These days I am gluten free. I thought my waffle-eating days were over until Bob (my fabulous husband) found a gluten-free mix in the gluten-free aisle of the grocery store (yes, he does all the shopping). He is a great cook (yes, he does all the cooking) and doctors the mix with extra vanilla and cinnamon, and uses So Delicious Dairy-Free Unsweetened Coconut Milk Vanilla Yogurt instead of milk. Brilliant.
Tonight Bob whipped up a few delicious squares, served them hot off the iron with a side of bacon. He makes the waffles-for-dinner experience all the sweeter.
